Have you had long beans? They’re classified as legumes, have a bean-like and buttery flavor, and lack sweetness compared to green beans or Haricots Verts.
I saw them randomly at the International market and picked up a bundle. The prep and cook were very similar to a traditional green bean, so if you’ve tried the green bean recipe in my cookbook, these cooking notes will feel very similar.
