Ok, a bit dramatic, but the push for dairy-free alternatives has quite literally changed my life.
If you didn’t know, I have a severe dairy allergy, so I’ve never had “real'“ cheese or milk. When I was younger, I watched other children eat pizza at pizza parties because the was no dairy-free cheese option. As dairy-free milk and cheese grow in popularity, it allows me to be excited about trying new dishes.
When I was younger, my parents often ordered spinach and artichoke dip, especially at Copper Canyon (iykyk). I would watch them eat and think the idea of artichoke and cheese was kinda gross. But after having the opportunity to try a vegan version, I understand how enjoyable the combo is.
This is one of my favorite recipes for late summer nights because, in the summer, this certainly counts as a meal.
